Holly & Heather’s Helpful Hint: Spring into Happiness!
This is a great time of year. A time of renewal in our hearts spiritually, a time of rebirth of everything in the garden, a time of lighter days and warmer weather. What is bringing you joy now? Do something that makes you smile, even if it is only one thing. Let the season of spring wash over you and give you a little bit of happiness. Take a walk outside, read a good book, do something fun with your family. We like to cook and every now and then we indulge in the kitchen with a sweet new recipe. Dessert is the best when it’s homemade! Here are a couple of great one’s we make:
Heather’s No-Bake Cheesecake:
2 bricks of cream cheese, softened
1 can sweet & condensed milk
1 graham cracker pie crust
Beat the cream cheese and sweet & condensed milk together in a bowl until it is creamy with no lumps. Pour into graham cracker crust, cover & refrigerate for a few hours or until set. So easy, so delicious & only 3 ingredients! You can top it with fresh strawberries if you like. I folded frozen blueberries into mine right before I poured it into the pie crust. It made the whole batter turn purple, we loved it!
Holly’s Tiramisu Trifle:
1 pound cake
1/2 cup brewed coffee, room temperature
1/2 teaspoon of vanilla extract
1 small tub of mascarpone cheese
1 tub of sweetened whipped cream
strawberries or any soft fruit you like
Cut the pound cake into cubes and place one layer of cake in the bottom of a trifle bowl. Mix the coffee with the vanilla and drizzle one-quarter of it onto the cake. Mix the whipped cream with the cheese and spread one-quarter over the cake. Layer the strawberries on top of the cream. Repeat with three more layers. Refrigerate when done…the longer it is refrigerated, the more delicious it gets!
