Holly & Heather’s Helpful Hint: Have a Healthy Day!

Are you taking care of yourself? So often we worry about others so much – making doctor appointments for our kids, getting vitamins for our spouses – that we forget to do the same for ourselves. We all need a little exercise, a healthy diet, some down time.  Remember when you feel good you do good. So what have you done to have a healthy day today? Here are a couple of recipes to start your day off right:

Heather’s Peanut Butter & Banana Smoothie:

1/2 banana, cut in chunks

1/2 cup peanut butter

1 cup almond milk

Put all ingredients into a blender and mix until smooth.  (Sometimes I use maple sugar peanut butter, it gives this smoothie a delicious sweetness)  This is a very satisfying breakfast!

Holly’s Mini Quiches:

1 small zucchini, grated

dash of onion powder

1/2 cup parmesan cheese

3 eggs

dash of dried basil

1 tbsp. extra virgin olive oil

1 tsp baking powder

1/2 tsp salt

1/2 tsp pepper

Preheat oven to 375 degrees. Spray one 24-hole mini muffin pan with nonstick spray.  Mix all ingredients together and pour a tablespoon of filling into each hole.  Bake about 15 minutes.  Enjoy this “packed with protein” snack!
